Smoked Chicken Salad With Citrus
Smoked Chicken Salad with Citrus is one of the healthy salad recipes that are available in my website. Its uses a low fat and calories yogurt plus with all the herbs and spices that can add more flavor to the salad.
INGREDIENTS
Salad
- 375g of boneless, skinless smoked chicken and being cut into a small pieces or cut into chunks- 1 number of pink grapefruit - 2 small oranges - ˝ cucumber that had been thinly sliced - 1 small fennel bulbs that had been trimmed and thinly sliced - 50g of frisé - 50g of lamb’s lettuce or watercress - some pink peppercorn - salt and pepper for taste
Yogurt Dressing
- 150ml of plain yogurt - 1 tablespoon of lemon juice - 1 teaspoon of clear honey - ˝ teaspoon of Dijon mustard - Salt and pepper for taste
METHOD
Yogurt Dressing
- Put all the ingredient into a bowl and beat it until the yogurt are well mixed and smooth
Salad
- Put the chicken into a bowl. - Using a sharp knife, feel all the oranges and the grapefruit and remember to remove the all the pith. - Work it over a bowl to collect the juice, segment the flesh. - Set the juice aside. - Add the citrus fruit to the chicken and mix it with the cucumber and funnel and toss it lightly so that the entire ingredients are well mixed. - Device the salad leaves on the plates. This recipe is for 4 people so we need 4 plates for this. - Arrange the chicken with the ingredients on the top of the salad leaves - To serve, stir the reserve of the citrus juice and the pink peppercorn, and pour a good amount of it over the salad.
