Chili Tomato Salsa Chicken





Chili Tomato Salsa Chickenhave a unique taste of the citrus and chicken and it is good for all the people that are health conscious and this recipes is also contains lots of fiber from the salads. This recipe serves for about 2 people and takes about 25 minutes to prepare.

INGREDIENTS

Salad

- 2 numbers of large boneless chicken that is without skin

- 4 tablespoons of extra virgin oil

- 250g of mixed salad leaves

- Rind and juice of 2 limes

- Salt and pepper for taste

- Lime wedges and coriander sprigs for garnish

Tomato-Chili Salsa

- 250g of cherry tomato, cut into 4 parts

- 1-2 fresh red or green chilies that had been deseeded and nicely diced

- 2 number of garlic loved that had been crushed

- 3 tablespoons of extra virgin olives oil

- Juice of one lime

- 2 tablespoons of chopped coriander

- ½ teaspoon of sugar

METHODS

Salad

- Punch the chicken with a rolling pin and put the chicken in the shallow dish.

- On the other bowl, mix the olive oil, lime rind and juice and also some pepper for taste. Mix it and this mixture will be the marinade for the chicken. So you can put the mixture to the chicken. And leave the marinated chicken for about 1 hour.

- Take the oil from the chicken and brush it on a griddle pan and heat the oil.

- Put the chicken and the remaining oil on the pan and fry it for about 3-5 minutes until the chicken is fully cooked on each side.

- Serve the chicken on a bed of salad leaves, garnished with lime wedges or coriander sprigs and serve the salsa on the top (please see below on how to make salsa )

- Just mix every ingredient well and it’s ready!!! :-D
