Chicken Stock
Chicken stock is one of the most important stock for many kind of recipes. Nowadays, there are many kind of chicken stock availabe in the market such as chicken cube and chicken powders. But as for me, the best is to make it yourself. So here is the recipe and hope you will find this recipe helpful.
Ingredient- 1 number chicken carcass or 2kgs of chicken bones - 1.8 litres of water - ½ tablespoon salt - 1 number of onion - 4 number of cloves - 1 number of celery stick (chopped) - 1 number of carrot (chopped) - 2 parsley sprigs - 1
Bouquet Garni
- 1 bay leaf - some black peppercorn
Methods - Put the chicken bones into a pot with water and salt. - Cook the chicken until the water and the chicken starting to boiled. - During the boiling process, the blood from the chicken started to coagulate and it becomes a scum. Skim off the scum using spoons of skimmer. - Set the heat into a low heat position and cover the pot and let it boiled for about 1 hour. - Take the onion and the cloves and stick the cloves into the onion. - Put the rest of the ingredient into the pot and let the ingredient cooked. - Keep skimming the scum. - Put more water if needed. But make sure that the chicken bones is fully submerged into the water. - Stir and cover the pot and let it boiled for another 2 hours. - Keep skimming the scum and put more water if needed. - After the stock is fully cooked, let it cool slightly. - Separate all the ingredient by straining the stock using strainer or others and you can discard all the bones and the herbs because we only need the stock. - Leave the stock to cool completely and then remove the fat by skimming it using spoons. Put the stock into the proper container and put it in the refrigerator.
Tips - To make the stock more tasty, you can put chicken meat by picking the meat from the chicken bones and put the meat after straining process. - After you had strained the stock, you can reheat the stock again until it boiled. Boil the stock until it is reduced and concentrated. Then you can freeze the stick into an ice cubes container and make it as a stock cubes. You can use it whenever you like. Just reheat the stock cubes and put it into your preferred recipes. - A good chicken stock can be stored in freezer up to 3 months.
Note - Makes about 1.2 litres of stock.
