Chicken Salad With Raisin
Chicken salad with raisins would change your normal salad diet into a more healthy and more interesting in terms of flavors. The mixture between lettuces, almonds, raisins and chicken would make the salad more interesting in terms of taste and nutritional values.
INGREDIENTS- 50g of raisins - A juice of one small orange - A pinch of ground cloves - 1 teaspoon of olive oil - 70g of blanched almonds, halved - 500g of cooked chicken that had been cut into strips - 1 head
Radicchio
Radicchio lettuce, shredded - 1 little gem lettuce, shredded - 1 Tables spoon of French Dressing - Salt and pepper for taste - Handful of parsley leaves for garnish
**French Dressing** - 2 Tablespoons of red or white wine vinegar - 1 or 2 cloves of garlic - 2 teaspoon of Dijon Mustard - 1/4 teaspoon of caster sugar - 6 tablespoons of olive oil - Salt and pepper for taste
METHOD
**Salad** - Place the raisins, orange juice, and ground cloves into a small saucepan. - Heat until boiling and then, remove from the heat and leave to stand for about 30 minutes to plump the raisins. - Saute the almonds under a medium heat using the olive oil until golden. - Put all the ingredients, including all the shredded lettuces, chicken, raisins and almonds into a serving bowl. - Toss and season well with salt and pepper. - To serve, spoon over and scatter with parsley leaved and this recipes is good served for 4 people.
**French Dressing** - Just mix all the ingredients into a screw-top jar and shake it until well combined
