Chicken Pizza Mexicana





Chicken Pizza Mexicana contains all kind of good ingredients such as the red kidneys, Sweetcorn kernels, fresh chili, onions and others. This pizza taste very good especially, with the presents of the kidney beans and smoked cheese. That makes the pizza so unique and “Mexican”. You will love it.

Ingredients

- 325g of boneless and skinless chicken that had been cut into small pieces

- 3 Tablespoons of olive oil

- 1 teaspoon of crushed coriander seeds

- 1 ready-made pizza base that is 12 inches or 30 cm in diameter

- 125g of grated mozzarella cheese

- 75g of grated smoked cheese

- 75g of canned red kidney beans

- 75g of Sweetcorn kernel

- 1 fresh chili that had been deseeded and sliced thinly

- ½ red onion that had been sliced thinly

- ½ red pepper that had been cored, deseeded, and thinly sliced

- Salt and pepper for taste

- Finely grated rind of 2 numbers of limes

- Some chopped parsley for decoration

Method

- Marinade the chicken with the lime rind and coriander seeds,

- Heat 2 tablespoons of oil on the frying pan, and place the put the chicken. Sauté the chicken for about 3minutes.

- Put the ready made pizza base on the pizza pan but remember to grease the pan before putting the base. This is to avoid the pizza from sticking to the pan.

- Sprinkle the base with the mozzarella and smoked cheese and add the kidney beans, Sweetcorn kernel, and sliced chili.

- Place the sautéed chicken evenly on the base and arrange the onion and pepper slice on top.

- Mix the remaining oil from the sautéed process with salt and pepper for extra taste and sprinkle it to the pizza.

- Bake in a preheated oven (240°C or 475°F or gas mark 9) for about 20 minutes.

- The pizza is good served when piping hot and places it on the plate and decorates it with tomato and chopped parsley.
