Chicken Pasta With Tomato
Chicken Pasta with tomato is very delicious to be eaten during lunch. This recipe uses the dried penne but you can also use any sorts of pasta such as
Conchiglie Pasta
or
Gnocchi Pasta.
The main ingredients in this recipe are carrots, pasta, celeries, chicken meats, and tomatoes.
INGREDIENTS
- 2 Tablespoons of olives oil
- 259g or 8oz of boneless, skinless chicken breast (diced)
- 1 large chopped onion
- 3 celery sticks (diced)
- 2 carrots (diced)
- 2 teaspoons of dried oregano
- 125ml or 4fl oz of red wine
- 400g or 13oz of canned chopped tomatoes
- Salt and pepper for taste
- 1 tablespoon of oregano leaves
- Adequate amount of parmesan shavings
METHODS
**Making Sauce**
- Heat the oil in a frying pan and fry the chicken pieces.
- Keep stirring until the chicken changed into a light brown color.
- Put the onions, celery and carrots and keep sautéing for 5 minutes until the vegetables are soft.
- Put the oregano, wine and chopped tomatoes and season to taste with salt and pepper.
- Boil all the ingredients and simmer for about 12 minutes.
**Cooking Pasta**
- Boil the water in a cooking pot and put some salt and also olives oil during boiling.
- You also can use vegetable oil instead of olive oil. The reason is only that to prevent the pasta from sticking during the cooking period.
- Put the pasta and cook the pasta until it reaches the
"Al Dente"
texture.
- Toss the pasta and put it in icy water then drain the water.
**Serving Pasta**
- Transfer the pasta to a warmed serving dish.
- Pour the sauce on top of the pasta, mix it carefully.
- Serve immediately with oregano leaves and Parmesan shavings.
