Chicken Croquettes with Lemon





Chicken Croquettes with Lemon is a burger or round type shape food that consist of mixed ingredients such as chicken, beef and others plus all kind of herbs and spices. But in this recipe, we are using chopped or minced chicken meat as the main ingredient. For your information, Croquettes can also be made in various types of shapes and sizes and it can also be eaten with rice, bread as a burger, mashed potatoes and others. Good recipes for any kind of party.

Ingredients

- 25g of butter

- 2 tablespoons of plain flour

- 150ml of full cream milk (any kind of milk will do depends on your diet)

- 250g of boneless and skinless and minced or chopped cooked chicken

- 3 tablespoons of chopped parsley or tarragon leaves

- 1 number of eggs, beaten

- 75g of dried bread crumb

- 2 tablespoons of rapeseed oil

- Rind of 2 numbers of lemons

- Salt and pepper for taste

- 3 number of lemon wedges

- Tarragon or parsley sprigs

Methods

- Put the butter in the saucepan and melt the butter.

- Sprinkle the flour and stir for about 2 minutes and then put away from the heat.

- Little by little, put the milk into the saucepan and keep stirring the mixture and return it back to the heat and bring to the boil.

- Keep mixing the ingredient until the ingredient will be very thick and smooth.

- After the mixture is already thick and smooth in texture, remove it from the heat and put the chicken, parsley or tarragon, half the lemon rind, salt and pepper for taste.

- Mix all the ingredients together and after that, the mixture on a plate and spread it out evenly and leave it until quite cold.

- Form the mixture into any shape that u like (usually in round or oval shape). Usually, according to this measurement, the mixture can make about 4 croquettes.

- On the other bowl, beat the egg and put the beaten eggs on a shallow plate.

- On the other plate, spread the breadcrumb and on the other plate, spread the rest of the lemon rind.

- For the cooking process, coat the croquettes with the egg, then the bread crumb and lastly, coat the croquette with the rest of the lemon rind.

- Rest the croquette for about 30 minutes by placing it in the chiller.

- Heat the oil in a large frying pan until hot. Add the croquettes and fry it for about 5 minutes on each side of it until golden brown and crispy. Remove it from the frying pan and drain the oil using a kitchen paper.

- Chicken Croquettes with Lemon is now ready to serve! And for garnishing, put the lemon wedges and the parsley sprigs.
