Spicy Chicken Casserole




Spicy Chicken Casserole is the recipe that uses various kinds of herbs and spices such as cloves, cinnamon, coriander and being cooked using a special equipment. Actually the terms Casserole is the ‘sauce pan’ in French. Casserole can be made in various style and ingredients such as chicken, lamb, beef, pork and other. But today, the main ingredient for this recipe is of course chicken. Good luck!

Ingredients

- 2 tablespoons of plain flour

- 1 teaspoon ground coriander

- ¼ teaspoon ground clove

- ½ teaspoon of ground cinnamon

- 4 numbers of chicken quarters skinned

- 4 tablespoons of virgin olive oil

- 2 numbers of chopped celery stick

- 1 number of chopped onion

- 2 numbers of crushed garlic

- 400g of chopped or crushed tomatoes

- 1 tablespoon of tomato purees

- 300ml or ½ pint of Chicken Stock

- 2 tablespoons of chopped fresh coriander

- salt and pepper for taste

Method

- Mix the flour, coriander, cinnamon, cloves, salt and pepper together and use the mixture to marinade or coat chicken quarter.

- Heat the oil in a casserole preferably flameproof casserole.

- Add the chicken and sauté over a medium heat for about 7-10 minutes until golden on all the sides if the chicken. Then set aside on a plate.

- Heat the remaining oil in the casserole, add the celery, onion, and garlic and fry under a medium heat.

- Keep frying the items until it is soft but not brown.

- Add the tomatoes and the tomato puree and stir well to mix. Then add the Chicken Stock

- Put the heat to the highest setting until the mixture starting to boil.

- Keep stirring so the tomatoes will be fully blended with the mixture.

- Put the chicken back into the casserole with the juice that have collected in the plate.

- Cover and simmer in a gentle heat and stir the casserole occasionally and remember to cover it as well.

- Keep simmering the casserole until the chicken is fully cooked. This will takes about 40 minutes.

- Put the chopped fresh coriander and season it with salt and pepper if needed.

Tips

- The Spicy Chicken Casserole is best to be served with boiled rice or new potatoes.
