Country Chicken and Tomatoes with Pepper




Country Chicken and Tomatoes with Pepper has a great blended taste of tomatoes, red wines plus all the herbs such as bay leaves and cloves. It taste great and is nice to be eaten with tortilla, bread, mashed potatoes or even boiled rice. This recipes serve for 4 people.

Ingredients

- 4 numbers of chicken parts. A chicken quarter is highly recommended

- 4 tablespoons of corn oil

- 2 numbers of onions that had been finely chopped

- 2 numbers of green pepper that had been cored, deseeded and nicely sliced

- 2 number of crushed cloves of garlic

- 500g of chopped plum tomatoes

- 600ml or 1 pint of red wine

- 1 tablespoon of dried oregano

- 2 numbers of bay leaves

- Seasoned flour for dredging

- Some pitted black olives for decoration

Methods

- Coat the chicken in the seasoned flour and rest the chicken for about 5 minutes.

- Heat the corn oil and sauté the onions for about 5 minutes.

- Add the chicken and cook until golden brown.

- Add the rest of the ingredients except the black olives.

- Cover the saucepan and let it simmer under a low heat for about 40 minutes.

- After the chicken is fully cooked, spoon the chicken and vegetables on to a serving dish and garnish it with the black olive.
